1 (8 ounce) package cream cheese, softened
1/2 cup white sugar
1/4 teaspoon vanilla extract
3 tablespoons mayonnaise
1 tablespoon lemon juice
1 cup sliced almonds
1 cup flaked coconut
8 oz. chocolate ice cream serving
Preheat oven to 350 degrees F (175 degrees C).
Melt the cream cheese and sugar in a large bowl. Add vanilla extract, lemon juice, and almonds to the creamed mixture. Mix together so that sugar mixture clings with your fingers rather than causing a familiar cracking sound. Spoon a layer of ice cream over the top of the cream cheese frosting, using about 1/4 cup on the spoon for each cup of ice cream. Place on prepared baking sheets.
