2 tablespoons vegetable oil
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup white sugar
2 eggs, beaten
2/3 cup milk
1 teaspoon vanilla extract
1 teaspoon lemon zest
2 tablespoons lemon juice
1 teaspoon vanilla extract
1/4 teaspoon almond extract
2 tablespoons lemon zest
1/4 cup orange juice
3 1/2 cups raisins
1 teaspoon vanilla extract
3 tablespoons butter
1 cup packed brown sugar
1/2 cup chopped almonds
Grease cookie sheets.
In a large bowl, stir together oil, salt, baking powder, sugar, eggs, milk, vanilla extract, lemon zest, lemon juice, lemon juice and almond extract. Mix well. Place cookies in cookie sheets.
Bake at 350 degrees F (175 degrees C), for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing from cookie sheets to wire racks to cool completely.
