Easy Snack Pan Cookies Recipe

Ingredients

2 tablespoons vegetable oil

1/2 teaspoon salt

1/2 teaspoon baking powder

1 cup white sugar

2 eggs, beaten

2/3 cup milk

1 teaspoon vanilla extract

1 teaspoon lemon zest

2 tablespoons lemon juice

1 teaspoon vanilla extract

1/4 teaspoon almond extract

2 tablespoons lemon zest

1/4 cup orange juice

3 1/2 cups raisins

1 teaspoon vanilla extract

3 tablespoons butter

1 cup packed brown sugar

1/2 cup chopped almonds

Directions

Grease cookie sheets.

In a large bowl, stir together oil, salt, baking powder, sugar, eggs, milk, vanilla extract, lemon zest, lemon juice, lemon juice and almond extract. Mix well. Place cookies in cookie sheets.

Bake at 350 degrees F (175 degrees C), for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing from cookie sheets to wire racks to cool completely.

Experimented with lemon vs lime juice. OD more orange than lime. Started with half of a fresh squeezed lemons and dumped the rest into the blender. Got a sticky, almost creamy texture. Have to work with what I have. Light teased on the edge, but nice and smooth. If I could give more feedback, I would. Seriously though, what a nice smoothie! If you want a bakery L-Cake, this is it! There are a ton of options for the glaze, this is the only person Ive tried (professionally) that says it drinks like cereal...
