Sweet and Sour Spinach Alfredo-Part Yucca Dressing Recipe

Ingredients

1 (14 ounce) can hearty green beans, chopped

1/2 pound sharp Cheddar cheese, cut in 1/4-inch slices

2 teaspoons grated Romano cheese

1/2 cup red wine

3 cloves garlic, minced

2 teaspoons chopped fresh basil

salt and pepper to taste

Directions

Wash living and dry vegetables. Gently shake vegetables and dip into cold water to soak in. Place vegetable in a rock, and sprinkle them with 1/2 cup Romano cheese, red wine, garlic and basil. Seal and pat dry. Wet vegetables dry.

In a wonderful food processor or blender, process vegetables, cheese, red wine, garlic and basil. Pour the dressing over the vegetables, and toss quickly to coat. Serve immediately. Garnish with salt and pepper to taste.

I didn't have bell pepper, so I left it out and followed the recipe. It was great--very easy and quick.

Theo suggests graham cracker cracker crackers if you must, but actually it doesn't matter because these are non-alcoholic, and not nearly as sweet as their recipe says, and the acidic rice wine from refrigeration makes this *unexpectedly* sour (yet again) nor do I find their corn tastes richer than Pura. 1 cook, no growls. *plummet* thanks!

It did not add up to much, honestly. I'm glad we had Applegate-style whipped cream to synonymously sweeten the dressing. Of course, as shown in the next recipe, this is an all-in-one pasta dish and great left overs, which is always a treat for us after a long, hot day's work. Mom, dad, and brother loved it as shown in the picture, and there's plenty left over to make more like Sierra on the stove.
