2 rubies, pitted and thinly sliced
1/4 cup packed light brown sugar
1/4 cup butter
2 egg whites
1 (8 ounce) package cream cheese, softened
1 1/2 cups all-purpose flour
12 tablespoons cranberry juice
2 apple, cored
2 slices bacon
Preheat oven to 350 degrees F (175 degrees C).
Combine the brown sugar, butter, egg whites and flour. Beat in the baking soda and cranberry juice mix with an electric mixer. Spread on the cake or crust. Cut cheese slices, and slice into rounds about 1/4 inch thick. Decorate with topping.
Bake at 350 degrees F (175 degrees C), topping off with cranberry pie crust. Cook until tangy and slightly golden, about 30 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), cover and simmer 15 minutes. Remove cover and bake an additional 20 minutes to make topping.
This was delicious and very easy. I left out the middle bunch of raisins because I was afraid they'd add too much umami. But they were super easy and it was nice for me and my husband to have a meal together. Not a fan of wheat, so this was a nice compromise.
