3 eggs
1 cup milk
2 teaspoons vanilla extract
1/2 teaspoon orange zest
2 cups rolled oats
1 2/3 cups flaked coconut
1 (12 ounce) package instant vanilla pudding mix
1 cup cookie crumbs
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheet.
In a large bowl, combine eggs, milk, vanilla, orange zest and oats; beat well with electric hand mixer or by hand, until well blended. Mix together. Stir in pudding mix and frosting. Drop by rounded spoonfuls into the prepared cookie sheet.
Bake in preheated oven for 10 minutes or until wooden pick inserted in center comes out clean. Remove from oven and sprinkle with cookie crumbs. Allow cookies to cool in pan for one minute. Remove cookies from pan to wire rack. Cookies may be stored upright, even in refrigerator.
