1 cup white sugar
1/4 cup vegetable oil
2 chicken legs with skin
1 onion, cut into wedges
1 (10 ounce) package instant vanilla pudding mix
Heat oven to 350 degrees F (175 degrees C).
Rub chicken with sugar, oil and cracker crumbs. Place skin side down on baking sheet. Cool and cut into 1 inch cubes.
Heat oven to 375 degrees F (190 degrees C). Sprinkle the pudding mix over chicken.
Bake at 375 degrees F (190 degrees C) for 10 minutes, turning frequently. Remove lid and bake for 25 minutes more. Serve warm or cold.
