Queenie's Roast Recipe

Ingredients

2 1/2 pounds lamb roast

1 small onion, finely chopped

2 cups barbecue sauce

1/2 teaspoon pepper

8 cups white wine

1 (4 quart) can chicken broth

Directions

Preheat oven to 400 degrees F (200 degrees C).

Melt butter or margarine in a large skillet over medium heat. Saute onion and saute garlic until tender. Mix in the sauteed onion mixture; saute for 2 minutes. Mix in barbecue sauce, pepper and wine and cook for 1 minute. Place chicken in a lightly greased 9x13 inch baking dish and pour sauce over chicken.

Bake in preheated oven for 1 hour.

I added frozen veggies, a squeeze of fresh lemon and a few grinds, this is so good and easy.. but if you want some kick in a salad, like I do, use olive oil instead of vegetable oil. I used McGraw's Quality Cut Clam Chowder.. great recipe .. but if you want more dressing, like I do, increase the crab and/or shrimp count to four. I used Newman's Own Herbal Dressing which is so good and easy. Thank you for the recipe ..
