Norwegian Pudding Recipe

Ingredients

1 cup raisins

1 cup all-purpose flour

1 1/4 cups butter, softened

1 1/2 cups colored sugar

1 tablespoon salted butter (e.g. "Hershey's")

1 teaspoon vanilla extract

1 teaspoon lemon juice

1 cup milk

Directions

Preheat oven on broiler setting.

In a medium bowl, mix raisins, flour, butter and sugar. Mix in salted butter (e.g. Hershey's) and lemon juice.

Spread butter mixture evenly over raisin sheet.

Rub raisin mixture with slightly more lemon juice to make a glaze.

Place raisin mixture in ovenproof dish with foil.

Bake in preheated oven for 30 minutes, turning frequently, until top is golden brown. Let cool and frost.

You may wish to brush raisin with lemon glaze, as this will add some interesting texture to the puddings.
