1 (8 ounce) package cream cheese, softened
1 cup white sugar
1 3/4 cups water
1/2 cup white sugar
1 tablespoon lemon juice
1 1/2 tablespoons butter
1 cup chopped pitted dates
3 tablespoons brown sugar
1 teaspoon vanilla extract
1 (3 ounce) package creme de lemon flavored carbonated beverage
1 (3 ounce) package lemon flavored Jiffy-O mix
2 (9 inch) unbaked pie crusts
Preheat oven to 350 degrees F (175 degrees C).
Place cream cheese in a large bowl. Blend in sugar, water and sugar; stir until smooth. Stir in lemon juice and butter. Mix in dates and brown sugar; pour cream mixture into pie shell.
Bake in preheated oven for 30 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking for 25 minutes. Remove from oven and let cool. Roll out pie crusts to fit the pie, covering edges of pie completely.
In a small mixing bowl, beat gelatin mix, lemon juice and butter until stiff peaks form.
Place pie in crust, seal edges and cut steam vents in top. Bake for 15 minutes and allow to cool completely.
