Oatmeal Layer Cake Recipe

Ingredients

1 (16 ounce) package white cake mix

1 (16 ounce) package non-instant vanilla pudding mix

1 (4.0 ounce) package butterscotch topping mix

Directions

Prepare and bake white cake mix according to package directions for a double boiler. Cool properly before coolressing the pudding and topping mix.

To Make Layer 1: Preheat oven to 230 degrees F (120 degrees C). Grease and flour a 16x20 inch pan.

To Make Layer 2: In a medium bowl, stir together the pudding, butterscotch mix and vanilla. Spread evenly over pan, then cut sides off of the cake to make four layers.

To Make Top: In a large bowl, mix together pudding mixture, butterscotch mix, and vanilla. Spread over oil.

To Make Bundt: In a large, shallow bowl, whisk together 1 cup of milk and 3 tablespoons of vanilla oil until smooth. Stir in reserved pudding mixture, then cut cake from pan.

To Make Fluffy Cake: Double boiler over boiling water; boil half of cake mix in water until almost cooked. Stir in pudding mix and pudding mixture. Return half to boiler. Return remaining cake mix to pan and stir in pudding mix. Place cake in freezer for 1 hour, stirring constantly. Let set, then reheat in freezer for 20 minutes.
