2 1/2 cups vegetable oil
4 slices bacon, diced
1 cup chopped onion
1 cup chopped celery
1 cup sliced fresh mushrooms
2 tablespoons all-purpose flour
1/3 cup condensed chicken broth
Heat oil in a large saucepan over medium heat. Saute bacon until crisp, removing excess fat. Place bacon in a large, shallow dish. Pour in onion and celery and spread over bacon, trying to cover once completely. Place mushrooms over celery and bacon. Pour in flour; mix well. Stir in chicken broth. Pour around all. Cover, and cook over medium heat 10 minutes.
Turn the crabmeat mixture over, and turn again, until completely browned. Reduce heat to medium and stir in bacon and mushrooms. Cover, and cook 5 minutes, until thick. Adjust seasoning to your liking, stirring often. Remove from heat, and stir in flour mixture. Cover, and cook 5 minutes more. Stir in chicken broth, tossing occasionally. Cover, and continue cooking 10 minutes.
This is really good. I liked the orange flavour but it could be a little sweeter.
