3 large white onions, thinly sliced
2 1/2 pounds fresh mushrooms, sliced
1 teaspoon olive oil
4 scallops, cut 1 inch thick
2 slices bacon
1 cup raisins
6 tablespoons brown sugar
Preheat oven to 350 degrees F (175 degrees C). Peel and slice onions and remove skin. But do not cut seeds. Place mushrooms, onion flesh, oil and scallops in a large, shallow dish.
Stir mushrooms, onions, olive oil, bacon, raisins in a separate pan on medium heat. Cover and simmer 4 hours while stirring occasionally.
Stir in juices from mushrooms and raisins. Transfer soup mixture to a 2 quart casserole dish. Pour brown sugar over (do not overcover) dish.
Bake in preheated oven for 10 minutes while vegetables heat.
