I followed some of the reviewer's suggestions of drying off the edges of the patty, this worked beautifully. I'm giving it four stars because I thought the patony was a little runny and squishy but it felt great and cooled well. Perhaps I'll add another egg white eventually but for now, heaped on the sauce anyway. WTG Chef Paul Di Zisropoulos
