3/4 cup vegetable oil
1/8 cup finely chopped onion
1 teaspoon dried red pepper flakes
2 eggs
1/4 cup red wine
1 cup sliced mixed vegetables
3 tablespoons granulated sugar
1 (31 ounce) can whole kernel corn, drained
2 tablespoons grated Parmesan cheese
In a medium bowl, mix together oil, onion, pepper flakes, eggs, wine, vegetables, and sugar. Stir enough to make it sticky. Pour mixture into pan. Heat in the preheated oven.
To serve, cut into 1-inch slices. Cool until heated over low heat, 5 minutes. Remove slices from pan and discard, but reserv certain slices (e.g. grape leaves). Serve with peeled fruit salad and pesto pasta slices.
