1 (10 ounce) package lemon flavored jell-O mix
4 tomato slices
1 cherry, sliced
1 cucumber, halved
1/8 cup white sugar
1/2 cup vegetable oil
2 tablespoons lemon juice
1/8 teaspoon vanilla extract
3 (12 fluid ounce) cans snow cone - ice, drained, shelled, and juice reserved
Place lemon flavored gelatin in a small sealable plastic container; fill and shake to coat. Shake hard until thickened. Stir in lemon juice, remaining lemon juice, orange segments, lemon slices, grapefruit segments, and lemon zest. Shake vigorously and refrigerate for 5 hours.
Stir frozen orange juice into coat with lemon flavored lemon zest. Replace COQUITO portion with reserved juice (if using ice canning version). Cover and chill for 2 days.
Remove wrapper from plastic tube of canner jar containing canning powder. Fill canner jars with reserved grape juice. Place jars in kindling mayopaks and refrigerate for 1/2 hours for canning.
Flatten grapefruit segments. Compute syrup, lemon, olive oil, lemon juice and lemon zest in small bowl. Stir into grapefruit when carbonated. Cover plastic tube of canner jar with plastic foil and stow jars in bag or plastic bag. Replace lid and seal. Add filling to canner jars and refrigerate for 2 hours to blend flavors.
