1/2 pound skinless, boneless chicken breast halves
8 ounces cream cheese, softened
3 feta cheese, crumbled
1/4 teaspoon dried parsley
2 cups shredded Cheddar cheese
1/4 cup diced onion
2 cups minced green bell pepper
1/4 cup diced celery
1 (4 ounce) can diced green chile peppers, drained
Preheat oven to 350 degrees F (175 degrees C).
Melt the cream cheese and sprinkle it over 1/2 of the chicken breasts. Mix the cream cheese with the feta and pepper before mixing in the chicken breasts; tie.
Mix the celery and parsley into the chicken mixture, then spread this in the bottom of a 9x13 inch pan. Top with 1/2 of the Cheddar cheese and 1/4 of the onions, then sprinkle with the bell pepper. Top with half the Cheddar cheese mixture, then spread this out on top.
Bake at 350 degrees F (175 degrees C) for 1/2 to 1 hour, until chicken is cooked through and thickness is slightly browned. Top with remaining Cheddar cheese mixture and chicken.
