1 cup butter, softened
1 teaspoon instant sugar
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
2 1/2 cups rolled oats
1 cup confectioners' sugar for decoration
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, cream together 1/2 cup butter or margarine, sugar and flour. Beat in the baking soda, salt and flour alternately with the vanilla. (Note: If making these for a party, be sure to use a coffee flavored coffee grinder for the baking soda.) Drop by heaping spoonfuls onto the prepared cookie sheets.
Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
To make the icing: In a medium bowl, stir together the egg, 1 teaspoon vanilla and 2 1/2 cups rolled oats. Beat in the confectioners' sugar until smooth. Drizzle icing onto cooled cookies.
