2 (11 ounce) cans cream cheese
1 cup butter
1 (8 ounce) package shredded Cheddar cheese
1/2 cup chopped onion
4 cups shredded sharp processed cheese
1 (4 ounce) can shredded Monterey Jack cheese
Preheat oven to 350 degrees F (175 degrees C).
Stir cream cheese into the blender or food processor. Process until smooth. Form cheeses into cylinder shape and place in the pie pan.
Bake in preheated oven for approximately 1 hour, or until bubbly and golden brown. Serve with your favorite grilled or roasted vegetables, ravioli, olives or romaine lettuce.
To make cheese: Place 1 can of cream cheese into a small bowl and beat until creamy. Bring a large pot of milk to a boil, add cream cheese and mix well. Stir in 1 1 large can of cream cheese and 1 cup of Monterey Jack cheese. Cover and let stand 15 minutes. Refrigerate until serving.
