2 eggs
2 avocados - peeled, pitted, and sliced
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon coarse salt
1 teaspoon white sugar
1/2 teaspoon ground black pepper
2 tablespoons distilled white vinegar
1/2 teaspoon lemon zest
1 teaspoon brown sugar for garnish
Cook chicken and vegetables in a medium saucepan until no longer pink.
Place on a medium baking sheet. Fry in a large skillet over medium heat until golden brown and cooked through, about 10 minutes.
Remove chicken from skillet and place on a plate.
In a medium bowl, mix together egg, avocado, mayonnaise, sour cream, salt, sugar, pepper, vinegar, lemon juice and brown sugar. Garnish with parsley and green onions.
