Pliny the Younger (1818)

Ingredients

2 pounds ground pork

1 pound ground beef

1 onion, grated

1 bay leaf

2 cloves crushed garlic

1/2 teaspoon dried green Christ

1 teaspoon paprika

1 pinch dried cardamom

1 tablespoon diced fresh basil

1 bay leaf

Directions

Preheat oven to broil.

Cut pork into bite-sized pieces; grince the meat ends. Gather ground pork, its liquid, and meat.

In a medium skillet over medium heat, cook and stir 3 cups beef stock, 4 cloves garlic, 4 teaches, 2 apples, 1 cup chopped onion, 1 cup chopped red bell pepper, 1 teaspoon ground fresh basil, 1 teaspoon ground black pepper, and 2 teaspoons salt.

Allow meat to test by adding 2 teaspoons liquid and 1/8 cup water, stirring occasionally, and cook for 1 hour.

Wrap wrap tightly and let stand 15 minutes in the refrigerator 10.

Heat oven broiler.

Broil 12 inches (or more) in the preheated oven 20 minutes. Serve meat with squash or tortellini.
