2 tablespoons cardamom
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 teaspoon lemon pepper
5 cups mashed potatoes
Stir cardamom, nutmeg, cloves and lemon pepper into a small pot. Pour over potatoes in a single layer. Sprinkle with remaining chopped potato. Ladle potatoes into pots. Adjust cooling water, if necessary, to keep potatoes submerged.
Bake in preheated oven for 50 minutes, until steaming. Raise temperature to 325 degrees F (165 degrees C). Baste with milk and cooking spray when necessary. Transfer potatoes to pot and mash occasionally.
