1 medium onion, peeled and cut into 1/2-inch pieces
1 medium zelaxed cucumber
1 medium carrot, peeled and cut into 1/2-inch pieces
1 medium green bell pepper, seeded and cut into 1-inch pieces
2 large tomatoes, halved
1 medium onion, chopped
1/2 teaspoon salt
1 teaspoon dried minced onion flakes
Place onion and cucumber in a large bowl, and mix together. Add carrots and bell pepper; mix thoroughly.
Heat a large saucepan with olive oil over medium heat. Add potatoes, stirring occasionally, until well coated. Remove from heat; mash in carrots and bell pepper. When potatoes are mashed, add tomato and onion to potato and toss thoroughly. Stir in salt, and adjust to taste.
Arrange vegetables in a single layer in a large container or dish. Pour or scoop the sauce over vegetables, covering completely.
