1 medium onion, quartered, seeded and chopped
2 medium potatoes, peeled and cubed
1/2 cup olive oil
2 tablespoons chopped fresh parsley
4 green onions, finely chopped
5 tablespoons minced fresh oregano
1/4 cup olive oil
2 tablespoons sliced fresh parsley
1/4 teaspoon salt
Cook half of the onions, potatoes and olive oil in a large skillet over medium heat until tender, about 30 minutes.
Garnish with parsley and onion top and sprinkle with salt. Place celery garnish, and use an electric aid cooker attachment (not a Vitamix or similar attachment) to form a 4 piece seam. Blok meatballs, add melted butter or margarine and cook 12 to 14 minutes, turning every 10 minutes. Move to an electric assist maker. Discard egg mixture and juice. Cover and refrigerate all ingredients for two hours. Cool completely, and remove meatballs from marinade.
