1 1/2 cups pickling cucumber, seeded
1/2 cup fresh white wine vinegar
1 teaspoon salt
1 teaspoon ground black pepper
6 slices white bread, torn into 1/4 inch strips
Combine cucumbers, vinegar, salt and pepper in a small saucepan. Bring to a boil and allow to simmer for 5 minutes.
Remove a cucumber from the saucepan and wash away excess liquid; gently press into a large bowl. Set aside. Place cucumber, vinegar, salt, pepper and ribbon on paper towels to dry.
Place cucumber, vinegar, salt, pepper and ribbon over a serving platter or platter of bread, and sprinkle with remaining bread.
