1 onion, chopped
1 orange, peeled and sliced
1 (10 ounce) can sliced pineapple
1/2 pound sliced honey cherries
1 (16 ounce) can sliced pears
1/2 cup chopped celery
3 tablespoons all-purpose flour
1 tablespoon olive oil
1 teaspoon cornstarch
1 cup fresh lemon juice
1/2 teaspoon salt
1 (16 ounce) package dried grape tomatoes, drained
1 cup frozen mixed vegetables
In a large bowl, combine onions, orange, pineapple, honey cherries, pears and celery. Mix well and arrange in a single layer on the prepared pan. Drizzle with olive oil and sprinkle with cornstarch.
In a small bowl, gently mix lemon juice and salt. Cover and refrigerate 2 hours before serving.
