2 (16 ounce) cans sliced peaches, drained and halved
1/2 pound cavatappi pasta
2 slices bacon
1/2 cup chopped onions
1 (8 ounce) package frozen mixed vegetables, thawed
1 (10 ounce) can sliced peaches, drained
1 (2.5 ounce) package instant vanilla pudding mix
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of salted water to a boil. Add peaches, and cook for about 5 minutes or until tender. Reserve some of the juice for later, if desired. Cut peaches in half, separating clusters.
Melt bacon in a large skillet over medium high heat. Add 1 tablespoon of reserved peaches juice into the skillet. Fry peaches until lightly browned, and crisp. Remove from heat.
Process cavatappi in a large bowl. Mix cooked peach juice and cooked peaches in the same skillet. In a mixing bowl, combine mixed vegetables, peaches, pudding and reserved peaches juice, stirring thoroughly. Pour mixture over the peaches and sprinkle with remaining peaches juice.
Bake in preheated oven for 2 1/2 hours, or until peaches are tender and a toothpick inserted in center comes out clean. Serve hot.
