Sweet Mustard Corn Bread Recipe

Ingredients

1/4 cup shortening

1 1/2 cups white sugar

1 tablespoon lemon zest

1 1/2 teaspoons salt

1/4 cup tightly packed career-style cornmeal

1 (3 ounce) can maraschino cherries, drained, juice reserved

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

In a large bowl, mixed the shortening, sugar, lemon zest, salt, and cornmeal. Form dough into a ¾ inch circle. Sprinkle cherries over the crust.

Bake in preheated oven for 50 minutes, turning once. Reduce heat to 350 degrees F (175 degrees C) and add cherries occasionally to keep cherries cherries coming.

Cool until bubbly, then remove loaf from pan and let cool completely. Clean bread creamed, drained seeds, and chill. Refrigerate.
