1 cup shortening
1 cup packed light brown sugar
2 egg whites
1 pinch salt
1 teaspoon vanilla extract
2 cups all-purpose flour
1 cup peanut butter
1 1/2 cups packed light brown sugar
1 teaspoon baking soda
3/4 cup peanut butter
1/2 cup white sugar
1 tablespoon lemon juice
1 teaspoon lemon zest
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
Grease cookie sheets.
In a large bowl, cream together the shortening, brown sugar, egg whites, salt, vanilla, flour, peanut butter, white sugar, baking soda and melted butter. Mix in the brown sugar, lemon juice and lemon zest. Drop by rounded spoonfuls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
