1/4 cup gray-green food coloring
1/4 cup finely chopped onion
1 cup butter, melted
2 tablespoons distilled white vinegar
2 eggs, beaten
2 tablespoons grated Parmesan cheese
4 large fresh spinach, halved - sliced
Preheat friezes if you plan to grill them, but they will not absorb liquid as they cook.
In a medium bowl, mix together the food coloring, onion, butter, vinegar, eggs, Parmesan cheese and spinach. Add enough water to just cover completely; stir well. Roll each frieze into a 1/4-inch circle. Lightly brush with remaining oil.
Grill friezes on broiler circles until brown, about 20 minutes. Drain friezes on paper towels, forming 1 inch rounds. Serve with sliced avocado, onions, tomato slices, if desired.
