1 (10 ounce) package egg noodles
2 pounds thinly sliced bacon
1/4 cup mayonnaise
2 tablespoons chopped fresh parsley
1/2 onion, white parts only
1 clove garlic, minced
1 (5 ounce) can tomato paste
1 pound mozzarella cheese, sliced
Bring a large pot of water to boil. Add noodles and cook for 15 minutes, until al dente; drain.
Preheat grill for high heat. Add bacon and saute thoroughly.
Spread egg noodles on bottom of large metal foil-lined pan. Sprinkle noodles with mayonnaise and sprinkle with parsley, onion, garlic, tomato paste, and mozzarella cheese. Tint each end with light brown, then white. Set aside.
Grill over medium high heat until crispy. Drain excess fat. Spread creamy mayonnaise on top of noodles and bacon; sprinkle with cheese. Heat through.
