Stuffed Mushrooms in Tomato Sauce Recipe

Ingredients

1 teaspoon water

2 tablespoons olive oil

1 pound mushrooms, sliced

1 onion, sliced

1 1/2 teaspoons chopped fresh oregano

2 tablespoons chopped fresh parsley

1 tablespoon chopped fresh thyme

1 cup milk

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

Directions

In a gallon saucepan, combine water, olive oil, mushrooms, onion, oregano, parsley, thyme, milk, lemon juice, and vanilla extract. Cover, and simmer for 15 minutes. Allow mushrooms to cool, or to stem.

Good and easy. I did have a packet of Nutri Ninja powder with me (sheer minuscule amounts at this point) but was unable to find a storebrand Sugar Free Diet smoothie because their ingredients list was out of date. I was able to find a variety of brands of milk and some cheeses (I mean, how can you go wrong...cream, red) but was unable to find the right blend of ingredients. Ultimately I settled for 1/2 cup of plain old goodness and chose to replace the orange with yellowing mustard. My family went back for seconds. This was all right.
