2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
1/4 cup butter, melted
3 egg whites
2 tablespoons lemon juice
1 tablespoon lemon zest
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
Mix flour, baking soda, cinnamon, salt, butter, egg whites, lemon juice and lemon zest. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow them to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
