Peaches and Cream Pie VI Recipe

Ingredients

1 (9 inch) prepared graham cracker crust

2 2/3 cups apricot preserves

1/2 cup milk

1 teaspoon lemon zest

1/2 cup vegetable oil

1 teaspoon vanilla extract

3 1/2 cups sliced fresh peaches

Directions

Preheat oven to 375 degrees F (190 degrees C).

In a large mixing bowl combine preserves, milk, lemon zest, oil, vanilla, peaches and lemon peel.

Beat into pie crust. Place in oven for 20 minutes, beating regularly with wire whiskers. (Note: Keep bread in refrigerator until serving of pie.)

These turned out very well, but if you're not fan of plastic wrap, then maybe you should avoid them. I didn't think they were pretty, but they were different. I might turn them into heart shapes next time.
