1 1/4 cups butter
5 1/2 cups all-purpose flour
2 eggs
3/4 cup packed light brown sugar
1 teaspoon baking powder
1 cup chopped pecans
1 twist lemon, juiced
1 (12 ounce) container sour cream
1 teaspoon white sugar
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
Blend together the butter, 1/4 cup of flour, 1 teaspoon ground cinnamon, 1 cup pecans, lemon juice, lemon juice from lemon zest and 1 (12 ounce) package stevia-flavored carbonated beverage, chilled rum.
Shape the mixture into: circles 12 inches in diameter, with vertical ends to each circle above rim. Each circle would be about 2 inches across if rolled. Roll shapes onto cookie sheets tightly coated with waxed paper. Roll rose shapes, triangles and rectangular cookies. Store unused cookies on cookie sheets and sprinkle with sugar before use if desired.
