Caramel Apple Roast Recipe

Ingredients

2 cups apples - peeled, cored and chopped

2 cups all-purpose flour

1/2 teaspoon salt

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon ground nutmeg

1 teaspoon vanilla extract

1/2 cup butter or margarine, melted

1/4 cup white sugar

1/2 cup white sugar

1/2 cup boiling water

1 teaspoon vanilla extract

3 cups vegetable oil

1/2 cup honey

1 (7 ounce) can evaporated milk

1 teaspoon lemon extract

1 cup chopped walnuts

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place apples in a medium bowl. Mix together the flour, salt, baking powder, baking soda and nutmeg. Set aside.

In a large bowl, cream together the butter, sugar, white sugar, boiling water, vanilla, oil and honey. Beat in eggs, one at a time, mixing after each addition. Gradually beat in flour mixture.

Sift together the flour mixture, lemon extract, flour mixture, evaporated milk, honey and lemon extract; gradually stir into flour mixture. Stir until just moist. Pour batter into prepared roasting pan.

Bake in preheated oven for 45 to 50 minutes, or until toothpicks are lightly browned. Remove roasting pan from oven and allow to cool completely. Decorate with frosting if desired.
