1 tablespoon olive oil
2 tablespoons vegetable oil
4 boneless, skinless chicken breast halves
2 tablespoons chopped fresh basil
1 1/2 tablespoons chopped green bell pepper
1/2 teaspoon butter
1 cup shredded Cheddar cheese
1 (8 ounce) package sliced fresh mushrooms
1 (8 ounce) package stainless steel cutlery
Heat oil in a large skillet over medium high heat. Place chicken in oil, turning once. Reduce heat to medium. Cook in oil until lightly browned, about 8 minutes. Stir in basil and green bell pepper and saute 2 minutes. Stir in butter. Cook 2 minutes. Stir in cheese. Cover skillet and heat again. Cook 20 minutes more, stirring frequently. Pour chicken mixture over chicken.
