1/4 cup white sugar
1/4 cup distilled white vinegar
1/4 cup orange juice
1/4 cup hot lemon juice
1/2 cup lemon zest
1 (3 ounce) can crushed pineapple, drained
1 (5 ounce) can sliced artichoke hearts, drained
In a small saucepan, warm sugar, vinegar, orange juice and lemon zest.
Stir the sugar mixture into the vinegar mixture and mix together with the lemon juice mix.
Return the vinegar mixture to the sugar mixture along with the pineapple and artichoke hearts. Pour over all and allow to heat for 1 minute.
