1 (2 ounce) package peaches, pitted and sliced
1/2 cup orange juice
1/4 cup lemon juice
2 teaspoons vanilla extract
1/2 cup margarine
1/4 cup white sugar
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon lemon zest
1/4 teaspoon lemon juice
Preheat oven to 350 degrees F (175 degrees C).
Pour peach slices into 6 or 7 small pie pans. Sprinkle orange juice evenly over peach slices. **
In a blender or food processor, combine peach slices, lemon juice, lemon zest and lemon juice.
Pour peach slices into pie pans; sprinkle orange juice over crusts. Refrigerate at least 1 hour before serving. Lovely Pie!!!
