Quick Lemongrass Pudding Recipe

Ingredients

2 tablespoons butter or margarine, softened

2 teaspoons lemon juice

3 tablespoons white sugar

1/2 cup water

2 tablespoons lemon zest

5 ounces fresh lemon grass clippings

Directions

Heat oven to 350 degrees F (175 degrees C).

In a large bowl, cream 1 ounce butter, sugar and 1/2 cup water. Mix together with lemon juice. Quickly beat in lemon zest and lemon grass clippings to give a "sugar-recipe."

Refrigerate and serve chilled.

These were pretty good, but the shrimp and spinach definitely need some fluffier out. Next time, I'll be keeping the vinegar and olive oil, and assuming the same goes for the bread pudding. I gave the bread pudding a solid 5, but gave the shrimps and spinach a solid "4", since I like good and messy recipes. I may cut back on the sugar a little next time, but not enough to measure, so I'll keep it at 2 tablespoons. This was all right.
