1 liquid smoke flavoring
2 tablespoons vegetable oil
4 skinless, boneless chicken breast halves
1 red onion, sliced
1 cup fresh bread cubes
2 eggs, beaten
1 teaspoon lemon zest, sliced
Heat the liquid smoke or cooking spray in a large skillet over medium-high heat. Press the chicken breasts against the bottom and out sides with water, turning once, until they are completely cooked.
Remove from their juices. Add bread cubes and eggs to the skillet, and cover briefly with the leftover chicken. Let the chicken simmer about 20 minutes.
Meanwhile, heat vegetable oil in a large skillet over medium-high heat. Saute the onions and chicken for 5 minutes, then stir fry for 2 minutes. Sprinkle the slices of bread over chicken and then thinly slice.
Return the egg mixture to the skillet and stir into the skillet, cooking, stirring, until evenly coated. Brush water with cooking spray and sprinkle with lemon zest.
Return skillet with chicken and serve with remaining yellow bread stuffing.
