8 skinless, boneless chicken breast halves
1 (8 ounce) package cream cheese
1/2 cup shredded lettuce
8 ounces shredded Cheddar cheese
1 (4 ounce) can diced celery
1/2 cup sliced mushrooms
1/2 cup shredded mozzarella cheese
1/4 cup chopped fresh onion
1 cup chopped green bell pepper
1 (16 ounce) can crushed pineapple with juice
Place chicken in a large resealable plastic bag; cover and refrigerate for 1 hour.
Melt cream cheese and lettuce in a medium saucepan over medium heat. Remove from heat and allow to cool.
Spread melted cream cheese mixture over chicken.
Arrange chicken over cream cheese mixture; brush with juice from the pineapple. Drizzle pita breads with pineapple juice.
Stir chicken mixture into chicken breasts. Sprinkle with cheese mixture. Place over the chicken breast mixture in a single layer. Roll up.
