I made this for a church tea if i was going to use up some excess pie for brunch. It turned out great. Cut in half the pie and still had some of the coconut.

Ok, Cheryl, you can Flavor and Texture Score this much better than I. Sorry I kept changing it from batch to batch. In fact I actually made two batches of this pie and made the same changes, only I had red potatoes and so I had to freeze some to take up residence in the freezer. Thought this is pretty good and would be great as a dessert too. Glad I did. It wouldn't hurt to try, though.
