1 (16 ounce) can crushed pineapple or pineapple juice
1 (16 ounce) can cream-style corn
1 (8 ounce) can cream of coconut
1 (16 ounce) can whole milk coconut
1/2 cup heavy whipping cream
2 tablespoons lemon juice
1 tablespoon vanilla extract
1 (10 ounce) package frozen whipped topping, thawed
Preheat oven to 350 degrees F (175 degrees C).
To Make Brittle: In a mixing bowl combine crushed pineapple juice, corn syrup, coconut, cream of coconut, whole milk coconut, and whipping cream. Mix until thoroughly combined, then beat in lemon juice and vanilla extract. Sprinkle mixture over a large baking sheet and place in a lightly greased 9x13 inch pan.
Bake in preheated oven for 15 minutes, or until a toothpick inserted into the center of the roll comes out clean. Roll and serve hot.
