2 cups grated Parmesan cheese
1/4 cup butter
1 onion, chopped
salt and pepper to taste
1 (6 ounce) package frozen chopped spinach
1 cup milk
1 (3 ounce) package dry Ranch-style dressing mix
1 cup dry bread crumbs
1/2 cup shredded Cheddar cheese
salt and pepper to taste
Preheat oven to 450 degrees F (230 degrees C).
In a small measuring cup, combine the Parmesan cheese, butter or margarine, onion and salt and pepper. Spread the mixture on a 9x13 inch baking pan, then press it down with a fork to make 1 1/4 inches of dry crust. Set aside for 5 minutes, then spread another third of the cheese mixture over the top.
Bake for 22 to 25 minutes in the preheated oven.
Meanwhile, cook and bake the Cheddar cheese, stirring occasionally until it is melted and smooth. While the cheese is still hot, spread half the dressing over the top and then lay the rest of the mixture to the sides over the cheese. Lay a layer of bread crumbs on top and pour milk over the edges of the cheese, pressing down to make sure that cheese is completely absorbed. Spread another layer of cheese and pour another third of the mixture over the cheese. Place one last layer of bread crumbs over the top and pour a third of the milk over the top. Bake for another 10 to 15 minutes, or until the cheese is set and the bread is brown and the cheese is bubbly.
