1 cup butter, softened
3 cups brown sugar
1 1/2 cups white sugar
1 cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
1 teaspoon vanilla extract
1/2 cup corn syrup
1 1/2 cups chopped pitted dates
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch round baking pans. In a small bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the brown sugar, 1 1 cup at a time, using an electric mixer until ingredients are well blended. Stir in the eggs one at a time, mixing immediately after each addition. Beat in the vanilla extract and corn syrup.
Dump mixture into prepared pans. Bake in preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely before frosting. Garnish with dates and candied fruit, if desired.
