Graham Cracker Pecan Ice Cream Recipe

Ingredients

1 3/4 cups Graham cracker crumbs

1/4 cup milk

1/2 cup Graham cracker paste

2 egg whites

1 1/2 teaspoons vanilla extract

4 egg yolks

1 1/2 tablespoons white sugar

4 egg whites

1 teaspoon vanilla extract

Directions

Preheat oven to 400 degrees F (200 degrees C). In a medium bowl, combine graham cracker crumbs and milk. Stir egg whites until just incorporated; stir in vanilla extract and 1/2 cup graham cracker crumbs.

Form 8 balls, center thickest. Spoon 2 tablespoons of mixture into each of 8 bottom layers. Press on bottom of each layer and press on edges to seal. Spread gelatin on top.

Combine egg yolks and sugar; beat well.

I submitted this years ago as a Christmas gift but haven't got round to trying it yet. My Santa didn't seem to have the ingredients so I had to make do with what I had available. I think they were all over the place so it would have taken me forever to figure out what to substitute. Anyways great recipe. My newfie said it was wicked good.
