2 cups white sugar
1 cup corn syrup
1 cup milk
4 eggs
4 teaspoons brown sugar
1 teaspoon vanilla extract
1 teaspoon salt
1/2 teaspoon ground cinnamon
1 1/2 teaspoons lemon zest
1 cup evaporated milk
1 (3 ounce) can evaporated milk
2 (1.5 fluid ounce) jiggers lemon-lime flavored carbonated beverage (such as Coke)
Lightly grease a 9x13 inch x2-inch pan.
Melt sugar and corn syrup in the microwave or in water over a double boiler. Bring syrup to a full rolling boil. Stir in milk, eggs, brown sugar, vanilla extract, salt, cinnamon, lemon zest and evaporated milk. Pour mixture into prepared pan. Chill in refrigerator for 1 hour.
Dissolve cheese in warm milk. Stir ricotta cheese mixture into center of cake and all layers of cake, folding seam to seam. Pour filling into pan. Chill overnight in refrigerator. Remove foil from plastic wrap over top of cake. Frost with frosting: swirl white hat on bottom of 5-inch pan. Place ice cream filling on top of ice cream filling and frost. Let cool completely in freezer. Serve immediately or refrigerate immediately.
