1 cup white sugar
1 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
2 cups shredded lettuce
6 tablespoons butter
2 eggs, beaten
1 (2 ounce) can sliced pineapple, juice reserved
5 tablespoons margarine, softened
3 tablespoons lemon juice
1/4 cup maple syrup
Sift together the white sugar, brown sugar, vanilla extract, lemon zest and flour. Make a well in the center of the mixture. Stir in salt, baking soda, cinnamon, pineapple, margarine, lemon juice, and syrup. Pour into the prepared cookie sheet.
Bake for 25 to 30 minutes in the preheated oven, until no pink appears in the center of the pan. Serve hot or cold.
