1 tablespoon vegetable oil
2 eggs
2 (1 ounce) squares unsweetened chocolate syrup
1 (16 ounce) can crushed pineapple
1 cup chopped pecans
Heat oven to 375 degrees F.
In a large bowl, mix the vegetable oil, eggs and chocolate syrup; stir until smooth. Fold in pineapple, pecans and chocolate mixture. Pour batter into 2 muffin-size trays.
Bake in preheated oven for 30 minutes, or until a toothpick inserted into center of a muffin comes out clean.
