4 skinless, boneless chicken breast halves
1 medium sausage, casings removed
1 onion, diced
3 green onions, diced
1 (14.5 ounce) can sliced peaches
1 medium onion, diced
1 teaspoon pepperjack cheese
3 tablespoons poppy seeds
2 teaspoons dried oregano
1 teaspoon dried basil
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 inch baking dish or 9x9 inch casserole dish.
Remove chicken breasts from oil and brown in oil. Remove meat from bones and cut into chunks about 4 inches thick. In a small mixing bowl, mix chicken pieces with shreds of sausage and browned sausages. Place large chunks on bottom of prepared dish. Layer with peaches, onions, pepperjack cheese and poppy seeds.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Reduce heat to 375 degrees F (190 degrees C) for 20 minutes. Reduce heat and stir until pepper coat. Cover and bake an additional ten minutes. Cool slightly before serving.
